FIND DP No. 106 INTRODUCTION In general, Western diets consume high amounts of protein, a major constituent of many vegetable and animal foods. In other words, Western diets have an excess of protein and/or a deficiency of other components [1(2).] This is partly natural and partly due to the food products made available to consumers by technological advances in modern manufacturing processes and by increased consumption of these products in the diet by industrialized countries. While Western diets provide protein from meat, poultry, and fish [1(2), 2(1)], the protein content of the plant foods they eat is very high. Plants are rich in protein and other essential nutrients: essential amino acids, vitamins A and C, and minerals. Plants provide all of their proteins through a highly complex biochemistry [1(2)]. Plants of the “dietary staples” crop family (i.e., legumes and cereals) have a good level of all essential amino acids (EAA's) and also provide the minerals zinc and iodine [2(1)(4)]. In contrast, cereals and pulses (e.g., wheat, oats, peanuts, rice), are poor in EAA's and vitamin C. The protein content of plant foods is an important determinant of their mineral and vitamin content and the availability of these micronutrients. Protein of plants is generally a complex structure of amino acids with an acid-base function. The high-quality proteins (those with good digestibility) are most efficiently digested by the body, whereas the low-quality proteins are poorly digested and may be converted to energy in the small intestine or colon, which may result in a variety of negative consequences, including an increased incidence of inflammatory bowel diseases (IBD), metabolic syndrome, impaired glucose metabolism, and insulin resistance. Plants of the “dietary staples” crop family (i.e., legumes and cereals) contain very rich concentrations of EAA's: the proteins are rich in lysine and tryptophan, amino acids that are vital for the synthesis and maintenance of strong immune systems and brain function, respectively [2(2)]. As a result, these amino acids in plant foods such as grains, beans, and dairy foods are used for their essential amino acid content. Additionally, plant foods are well-absorbed by the human body owing to their high fiber density. Fiber is an essential nutrient that is synthesized by the body from dietary carbohydrates, and its function is to regulate bowel function and digestion.
