Click on File to open the menu. Click on Options from the menu. Click on Mail on the left pane. Under the Compose messages section, click on the Compose messages in this format drop-down and choose the format you wish to use as the default. Click OK when you are done.
When you create a new mail folder, Outlook automatically applies the Messages view. Therefore, to modify the default view, you must change the built-in Messages view. Switch to any mail folder, then choose View, Current View, Define Views. Select the Messages view, then click Modify.
From your gear menu, select Options. Click Message format under the Layout menu. Make your desired changes in the Message font window. Click Save.
In Outlook, select File > Options. Select Mail in the left pane. In the Compose messages section, change the Compose messages in this format: to HTML, Rich Text, or Plain Text as desired.
