Select what you want to copy by highlighting the text. Placing three fingers on the screen, make a pinching-in motion. From there, move your cursor to where you want the text to go, and pinch out with three fingers to paste.
There is no direct way to access your clipboard but you can try some tricks to see what is copied on the clipboard. The simplest trick is to go to the Notes App of your iPhone and open a new note. In the new note, tap and hold on the text field and press on paste.

Apple introduced a feature in version 3.0 of the iPhone's firmware that allows you to highlight and select text within an application. Launch the application containing the paragraph of text you want to select. Press and hold the first word in the paragraph and drag the cursor to the beginning of the word.
