need to be able to tab from filler boxes and be able to automatically type in the boxes without having to add text boxes

It works - one problem I found though is that after I scanned a document with the Adobe scanner, the document was locked with password not allowing it to be opened by the person I sent the document to. I didn't seek that extra security so I basically don't know where it NOcame from.

Launch Notes on your iPhone or iPad. Tap the New Note button in the bottom right corner. Tap the checklist icon to create a checklist entry. Tap return once to create another entry. Double-tap return when you're done making your checklist to start using standard body text.
