Thank you so much for the super prompt reply! I had somehow removed the date stamp from my digital signature and I could not figure out how to get it back on. Turns out it was a pretty simple fix (doh!). Kara responded super fast to my cry for help. She provided written instructions as well as a screenshot (very helpful!). My date stamp is back on. :)

Pages does not split text in rows over to the next page as does Microsoft Word or LibreOffice Writer. If you want the table rows to advance beyond the current page, then you need the Text Wrap on the Arrange panel to show Inline with Text, the default setting when the table is first inserted.
Click an object to select it or select multiple objects. Do either of the following: Lock: Choose Arrange > Lock (from the Arrange menu at the top of your screen). Unlock: Choose Arrange > Unlock.
Resize, move, or lock a table in Pages on iPad Tap the table, then tap. in its top-left corner. Drag any of the blue dots on the edge of the table to make the table larger or smaller. To resize the rows and columns simultaneously, drag the blue dot in the bottom-right corner.
In Word for Mac, press Command+F11 to lock a field, Command+Shift+F11 to unlock a field.
Click Settings/Actions > Lock. The Lock icon appears next to the name of the table. Tip: To unlock a table, follow the same steps and click Unlock.
Add a new table Do one of the following: Place the table within the text: Click in the text where you want the table to appear. Click. in the toolbar, then select a table or drag one to the page. Do any of the following: Type in a cell: Click the cell, then start typing.
Change the look of a table: Click the table, then use the controls in the Table tab of the sidebar to make changes, such as adding a table title or outline.
Lock or unlock a table Lock a table: Click the table, then choose Arrange > Lock (from the Arrange menu at the top of your screen). Unlock a table: Click the table, then choose Arrange > Unlock.
