Use the buttons in the Alignment panel to set both the horizontal and vertical alignment of your text. To open the Text Options panel, click on the cog icon at the top of the Text panel. Here you can set text decoration (underline, strike through) and transformation options (uppercase, lowercase).
Creating text on a path using Sketch is surprisingly easy. Simply draw the path using the Pen Tool, then type the text close to that path. Once you've done so, you should select from the Sketch menu > Text> Text on path. Et voilà!
In an open sketch, right-click the text (the pointer changes to when it is over the sketch text) and select Properties. Edit the text and its properties in the Sketch Text PropertyManager as necessary.
To convert a text layer to a vector shape, choose Layer Convert to Outlines from the menu (or press Alt-Command-O). You will now be able to edit the individual paths and points just like any other shape. If your text layer contains different colors, those will be respected and converted into separate paths.
Underline and strike through: In the upper left of the Text Style panel's Format tab, you find an Underline button and a Strike through button. Alternately, apply underline by selecting Text > Underline or pressing Ctrl+U.

To resize a layer and its properties (corner radius, border thickness, shadow size, etc.) all in one go, choose Layer Transform Scale from the menu (or press Command-K). Symbols can also be scaled using the Scale command. Scaling layers is ideal when you want to adjust the size of an icon.
