A sous chef's job involves managing a team, planning menus, and overseeing kitchen operations. Having a wealth of experience in the culinary industry is crucial, but a formal education is not always necessary. Strong cooking skills and exceptional organizational skills are at the core of a sous chef's responsibilities.
Every chef has their own creative process and preferred method for documenting their ideas — ideas which eventually morph into recipes. This can range from notebooks, scrap paper and post-it notes, to note apps like Evernote and Apple Note, Google Docs and countless other ways.
Executive and head chefs will organise their kitchen staff titles in different ways, sometimes without any chef de partie, other times without commis chefs. The chef de partie will report into the sous chef and will be in charge of the commis chefs assigned to their station.
Almost all sous chefs work their way up to their position from an entry-level job like a dishwasher or line cook . Sous chefs who have degrees in the culinary arts typically also have worked in test kitchens, partner hotels and other institutions. Almost all degrees require a certain amount of on-the-job training.
Sous Chef, or Assistant Chef, is the right-hand to the Executive Chef. Sous Chefs manage a staff of assistant chefs, cooks and kitchen workers, as well as creating dishes for the menu. Senior Chef, formally called Chef de Partie, is assigned one particular menu specialty in which he or she excels.
It is generally expected to work in a professional kitchen for 3 to 5 years before being promoted to sous-chef when starting out in the culinary profession. This is because sous chefs need to have a comprehensive understanding of the kitchen, as well as leadership and management skills.
