The short answer is: you don't rename the tag. Simply create a new tag on the commit with the new name you want, and then delete the old one. One caveat to this: Annotated tags store more information than just the name.
Change Tags Name & Color There are two ways of changing the name and color. One way is through Finders preferences and the other way is by simply right-clicking on the tag in the sidebar. The easiest method is to just right-click the tag in the sidebar, from here you can quickly change the name and color of it.
Keep in mind though that they are not allowed to tag you again once you've untagged yourself. So if they go back through their photos and see that you aren't tagged, they'll try and tag you (thinking they missed you in error) and will find out that you've purposefully untagged yourself.
No. Facebook notifies everyone who appears in a tag as per above but doesn't notify if a tag is removed. Adding a tag has privacy implications, removing a tag does not, so no notification is necessary.
Your only option for undoing the effects of removing a tag is to reapply that tag. When you're the owner of the photo you're retagging, the tag is applied immediately.
