In the Preview app on your Mac, if the Markup toolbar isn't showing, click the Show Markup Toolbar button. Use the tools in the toolbar to mark up the PDF (or use the Touch Bar). Tool. Description. Text Selection. Select text to copy or delete. See Select and copy text in a PDF. When you're finished, click Done.
Open a PDF document in Preview. Click the Text Annotation tool. Click and drag where you want to add a new note to your document. Double-click inside the note to add your text. Be sure to save your document so you do nit lose you new notes.
Start commenting in PDF on Mac Open the “Comment” tab at the top in the toolbar. Then you can click on the tap “More” and choose “Text Comment” or “Sticky Note”. From there you will place where you want to add notes in text, freehand style, or even adding a comment balloon.
You can move the note icon by clicking on the Text Selection tool or the Rectangular Selection tool (it looks like a square with dotted corners) and then clicking and dragging the icon to the area of your liking.

The only way I've managed to do it with Preview is by adding a black rectangle with the “add shape” option under Markup Toolbar. Then you can shape the rectangle to fit the text you want to hide! You just have to save it on print > save as PDF, or else other programs will be able to mess with it.
