An employer must give employees a 'written statement of employment particulars' if their employment contract lasts at least a month or more. Non-documented commitments aren't illegal. But they are risky. If the employer is honest and is interested in hiring for a longer period of time, you'll be given a work contract, unless it's your own wish to not sign anything. Yes it is legal to work without a contract.
