Duplicate the Measure you want to sort on by CTRL+dragging it onto the row or column shelf. Turn it into a discrete field by right clicking on the Measure Discrete. Drag it to the left to be the first Discrete field, et Voilà!
Right-click the SUM(Sales) in the Rows shelf, select Discrete and drag the pill to the left of the Category. This will cause Tableau to sort the table by the first field which is now our percent difference.
Build your stacked bar chart in Tableau. Create a combined field using the dimensions you want to sort by. Drag the combined field to the detail and sort by the measure. Finally, drag the dimension that you are sorting by to the detail. Now you have a stacked bar that is sorted by two dimensions.
Only 'calculated groups' can be used in a calculation — groups created with the 'ad-hoc' method of selecting members in the view and then clicking the group button cannot be used in calculated fields. Sets, on the other hand, can be used in calculations by using a bit of logic.
There are differences between the two that I will try to sum up. The most significant difference is that sets are dynamic while groups are not.
