Had a few difficulties with the process, but was able to sort it out after a little experimentation. I would like the ability to vary the size of signatures. I also tried to change the date format and set a new default but it didn't seem to work. Overall, I was ok with the program but I really didn't find it fitted my purposes.

Right-click in an open area of the details pane and select Sort By from the pop-up menu. Select how you want to sort: Name, Date Modified, Type, or Size. Select whether you want the contents sorted in Ascending or Descending order.
If the files were created on set dates you can just sort them by date in explorer. I'm guessing this is not the case. So if you rename files as Molly suggested (yyyy-mm-dd) then sorting by name will also sort them by date.

Put the insertion point anywhere within the table. Choose Sort from the Table menu. Using the Sort By drop-down list, choose the column containing the dates (for instance, Column 4). When you select the Sort By column, Word should automatically change the Type drop-down list to Date. Click OK.
