The learning curve is not too steep. I'd feel more confident with it, if there was a way to save the document other than clicking DONE which closes it....it's better than the government forms I've hassled with!

Make sure you are using the latest updates for Office 365 app. Also check if there is any password protect issue on other Office files such as Excel 2016 workbook. Please temporarily disable any third-party anti-virus program on this computer, then create a new document for a test.
To turn off the protection, click the Review tab and click the Restrict Editing icon. Click the Stop Protection button at the bottom of the Restrict Editing pane, then enter the password and click OK.
Protect a document with a password to File > Info > Protect Document > Encrypt with Password. Type a password, then type it again to confirm it. Save the file to make sure the password takes effect.
On the Review tab, in the Protect group, click Protect Document, and then click Restrict Formatting and Editing. In the Editing restrictions area, select to Allow only this type of editing in the document check box. In the list of editing restrictions, click No changes (Read only).
