Slick tool. Nice editing capabilities. Some of the menus are confusing - for example: finding where to update an existing link to fill document is challenging.

A scale break is a stripe drawn across the plotting area of a chart to denote a break in continuity between the high and low values on a value axis (usually the vertical, or y-axis). Use a scale break to display two distinct ranges in the same chart area.
An axis break is a disruption in the continuity of values on either the y or x-axis on a chart. It is also known as a scale break or graph break and is shown on the chart as a wavy line or diagonal line on the axis and on the bars plotted on that axis.

4 Answers. You cannot break the y-axis on an Excel chart to show several, non-contiguous ranges, but you can change the default range by right-clicking on the y-axis and selecting Format Axis and then changing Minimum and/or Maximum from Auto to Fixed then supplying new values.
A break in the Y axis would distort your chart and make it impossible to compare relative sizes by just looking at the height of the bars, which is what a bar chart is designed to enable the viewer of your chart to do. You could consider setting the Y-axis to use a log scale perhaps.

Click the “Axes” drop-down menu in the “Axes” section of the ribbon at the top of the window, click the axis (horizontal or vertical) containing the scale that you want to adjust, then click “More Primary Horizontal Axis Options” or “More Primary Vertical Axis Options,” depending upon which axis you are editing.
