A document is a JSON document which is stored in Elasticsearch. A document contains a list of fields, or key-value pairs. The value can be a simple (scalar) value (e.g. a string, integer, date), or a nested structure like an array or an object. A field is similar to a column in a table in a relational database.
As you can see, the PDF document is first converted to base64 format, and then passed to Mapper Attachment Plugin. Then, the required parser library is selected and applied to the document to extract its text and metadata. Once text and metadata are extracted, they are indexed to Elasticsearch.
