Outlined fonts means vector text that is no longer a font but rather is vector shapes. It eliminates issues for the printer not having the font. You can convert text to outline in any of the creative suite programs before exporting to PDF but make sure you don't save over your live-type version in case there are edits.
Why would printers want files with outlined fonts? ... The reason why a print company would want fonts outlined is to still be able to print the font without having to have the font installed on their systems. This ensures there are no issues with fonts in the design file or any errors.

For PDF files outlining fonts is not necessary. With the proper PDF job options, fonts are embedded into the PDF as live type. This allows the font to retain it's original hinting data. ... The only time a font would be substituted for another is if the PDF were opened in some other application, such as Illustrator.
The main purpose of outlining is to prepare an InDesign file for printers that do not want to mess with font permissions and have their workflow set up to work with InDesign files.
To convert text to outlines, go Select > Select All. It doesn't matter if other graphic elements are selected. Select Type > Create Outlines from the menu. The text will become outlined and can't be edited as text (see the image below right).
Type some text on your page. ... Switch to the Selection tool and choose Recreate Outlines. ... If you're being creative, or just particular, and want to move individual letters, use the Group Select tool or choose ObjectUngroup to separate the letters, as shown.
Create or open a Microsoft Word document. Do so by opening the blue and white app with a “W,” clicking on File in the menu bar, then clicking on: ... Highlight the text you want to outline. Click on the “Text Effects” tool. ... Click on Outline. Customize the Outline effect.
In essence, converting to outline means turning text into a graphic image. Once text has been converted, the actual font software is no longer necessary for viewing and printing that part of a document (or the entire document if all the text has been converted).
If you are using Excel or PowerPoint Under Drawing Tools, on the Format tab, in the Word Art Styles group, click the arrow next to Text Outline, and then do one of the following: To add or change an outline color, click the color that you want. To choose no color, click No Outline.
