How do I select text in sketch?
Select the text layer and then select Text > Text on Path. Finally, drag your text layer towards your shape layer and let it snap into place.

Text on a path: Simply draw the path using the Pen Tool, then type the text close to that path. Once you've done so, you should select from the Sketch menu > Text> Text on path. Et voilà!

CMD + K is your only option if you want to keep text editable. You can't drag to transform/resize or use the property inspector. The only way to scale text in a symbol is to use the scale tool CMD + K.
