Tri tip is a triangular cut of beef cut from the bottom of the sirloin. Named after its triangular shape with a tapered “tip”, tri tip might just be one of the most flavourful cuts of meat that you've never heard of.
Some fat helps break the meat down and tenderize it. London Broil or Tri-tip is lean. Marinate it in something like Dales or Moore's or a black pepper marinade for 24 hours. (If you are in the US, you can likely find one of these.). Grill indoor or outside, do not overcook, then slice VERY THIN across the grain.
