After 24 hours, discard half of the starter and feed it with equal parts of flour and water. Mix well and cover again. Let it sit for another 24 hours.

Repeat the process of discarding half and feeding the starter for about 5-7 days, until it becomes active and bubbly.

Once the starter is active, it's time to make the dough. In a large bowl, combine 500g of flour, 350ml of water, and 200g of the sourdough starter. Mix well until all the ingredients are incorporated.

Add 10g of salt to the dough and mix again. You can also add any additional ingredients like herbs or spices at this point.

Cover the bowl with a clean kitchen towel and let the dough ferment for 4-6 hours at room temperature. During this time, perform a series of stretch and folds every hour to develop gluten in the dough.

After the fermentation period, shape the dough into a round loaf or any desired shape. Place it on a well-floured surface or in a bread proofing basket.

Let the dough proof for another 2-3 hours, until it has doubled in size.

Preheat your oven to 450°F (230°C) with a dutch oven or baking stone inside. Once the oven is hot, carefully transfer the dough into the preheated dutch oven or onto the baking stone.

Bake the sourdough for 20-25 minutes with the lid on, then remove the lid and bake for another 20-25 minutes, until the crust is golden brown.

Once baked, remove the sourdough from the oven and let it cool on a wire rack before slicing and serving.
