Select the Insert tab, then click the Header or Footer command. In the menu that appears, select the desired preset header or footer. The header or footer will appear. To edit a Content Control field, click it and type the desired information.
Place the pointer where you want to start a new section. Select Layout > Breaks. (+) Select the type of section break you want.
Click or tap where you want to start a new page without the header or footer. Go to Layout > Breaks > Next Page to create a section break. Double-click the header or footer area (near the top or bottom of the page) to open the Header & Footer tab.

Double-click the header or footer. Select Different Odd & Even Pages. On one of the odd pages, select the header or footer area you want to change. Type the document title, and then press Tab twice. Select Page Number > Current Position and choose a style. Select an even page.
Then go to the Layout Tab. Go to the Page Setup Group and Click the Breaks Command. Under Section Breaks, select the Next Page Option. Your page will now be separated in a different section and formatting (including headers) in that page stays in that page and won't affect your subsequent pages.
Headers and footers in Word are related to sections in a document. In order to have different headers/footers on different pages (or in this case, a header on some pages but no others), they must be in different sections. You can insert a section break by selecting Page Layout > Page Setup > Breaks, from the ribbon.
