Cover the fermentation vessel with an airlock to allow the carbon dioxide to escape while preventing any oxygen or other contaminants from entering. Place the vessel in a cool, dark area with a consistent temperature between 60-75°F (15-24°C).

Let the juice ferment for several weeks. During this time, the yeast will consume the sugars and produce alcohol. Monitor the fermentation process by checking the specific gravity with a hydrometer. When the specific gravity stabilizes, fermentation is complete.

Once fermentation is finished, transfer the wine to a clean and sanitized container, leaving behind any sediment or lees at the bottom. This process is called racking and helps improve the clarity and flavor of the wine.

Allow the wine to age for a few months or even years, depending on the desired taste. Aging can be done in glass bottles, oak barrels, or stainless steel tanks. The longer you age the wine, the smoother and more complex the flavors develop.
