If you want to highlight one word at a time, press Ctrl key while holding down Shift, and then press the left or right arrow key. If you want to highlight a whole line of text, move your cursor to the start of the line, hold the Shift key, and then press the down arrow.

To bold a word, put asterisks around it. For italics, use underscores. For strike-throughs, put hyphens (or dashes) around the text. Here's a video from YouTube Help that explains all of this in video format.
Select the text that you want to highlight. Click the Home tab in the Ribbon. Click the arrow next to Text Highlight Color in the Font group. A color gallery appears. Select the desired highlight color from the gallery.
