I don't pay for PDFfiller so I can only say speak to the ease of use on features that I think are available. I am not sure if creating a document that is editable in word is possible in every version. If so I can not figure it out. That is my only feedback. Otherwise using this website is a breeze.

I think you should be able to hit the… I think you should be able to hit the tab and go to the next number box and it center it. There is probably a way to do that but I just don't know how.

By default, Word automatically updates fields when a document is opened. If you prefer, you can update fields manually. To update a field manually, right-click it and then click Update Field or press F9. To update all fields manually in the main body of a document, press Control + A to select all and then press F9.

Double-click the header or footer you want to edit, or select Header or Footer, and then select Edit Header or Edit Footer. Add or change text for the header or footer or do any of the following: ... When you're done, select Close Header and Footer or press Esc.
To update one field, there is a utility in right click menu. Select the field you want to update, right click to display the context menu, click Update Field. Then the selected field has been refreshed. If you want to update all fields in the whole Word document, you can use shortcuts.
Press Ctrl + A. Press F9. If your document has tables with fields or formulas, you might need to select each table separately and press F9.
