Unfortunately, there currently isn't a keyboard shortcut for highlight text in Docs. To help influence future feature changes or additions in Docs, I encourage you to provide feedback about this directly to the Docs team by following these steps: Open a document.
If you want to highlight one word at a time, press Ctrl key while holding down Shift, and then press the left or right arrow key. If you want to highlight a whole line of text, move your cursor to the start of the line, hold the Shift key, and then press the down arrow.
Using the highlighting shortcut key Adding highlighting: Select the text you want to highlight, then press Ctrl+Alt+H. Removing highlighting: Select the highlighted text, then press Ctrl+Alt+H.

Step 3: Right-click the selected text and choose the Select matching text option. All the text with the same formatting will then be selected, such as in the picture below.
