Do they record conversations in jail?

Phone tapping is legal in prisons, and they routinely record inmates' conversations. Even though prisons are free to listen to telephone conversations, inmates still have managed to find clever ways around this surveillance.

Are inmate visits recorded?

The bottom line is that prison phone calls, and in many cases in-person prison visits, are recorded. As long as the prison provides some sort of notice that the phone calls could be recorded, those conversations are admissible in evidence against a criminal defendant if the defendant says something incriminating.
