The text writing font options are few and when the writing box dissapears the text changes size and font that what it was displayed.

More font options and ability to match font of the original document. When editing in a document your software changes the size and font of the edited text.

If you don't see page numbers on the screen or in Print Preview, go to Document > Header and Footer > Options.
How do I remove page numbers from certain pages?
Go to Insert > Header & Footer.
Selections on the right side, and then select Different First Page.
Select Options again, and then select Remove Page Numbers.
To see your page numbers and confirm deletion of the number from the first page, go to View > Reading View.
How do I lock a PDF on my iPhone?
Once the PDF file opens in Documents app, tap on the Menu button (three dots) in the top right corner to bring up menu at the lower section of your iPhone screen. Choose Set Password. Remove Header and Footer: If the page numbers have been defined as a real Header and Footer and were tagged as such when added to the document, you should be able to remove them under Document → Header and Footers → Remove.
