The quick answer is that higher resolutions lead to better scans for reproducing your images. 600 DPI scans produce much larger files, but help ensure every detail in your print is recorded in digital form. If you want files that are easier to work with, 300 DPI scans would be a better choice.
For a 16×20 image, 300 dpi is good enough. It's when you need smaller or larger images that you need high dpi prints. For example, if you need pictures too small or too large, then you need high dpi. 600 dpi prints have twice the resolution than 300 dpi and are therefore sharper results.

DPI stands for Dots per inch. It indicates the number of dots the printer prints per inch. Higher The DPI, the more toner is used and also excellent quality printouts are printed. So, 1200 DPI consumes more toner than 600 DPI.
The unit of resolution is dpi (dot per inch) or PPI (pixels per inch). For normal full-color prints, an image resolution around 350 dpi is appropriate for the actual original size, most printing shops would recommend 300dpi to 400dpi.
A 600 dpi printer squeezes 600 dots horizontally and 600 dots vertically in every square inch of the sheet. Some ink jet printers have a higher resolution in one direction, so you might also see a resolution like 600 by 1200 dpi. Up to a point, the higher the resolution, the crisper the image on the sheet.
