What do you like best?
Ease of use, variety of tools, and it has everything I need for my line of work which is Real Estate.

Font choice is a little limited unless I don't know how to find them... Other than that, I've used PDF Filler for about three years now and it is almost a necessity with my job.

How do I lock a custom field in Jira?
JIRA doesn't allow you to lock fields. The workaround is to put the field on a transition screen for a transition with a condition of a particular project role. Then put the field ONLY on the view screen. Put the transition anywhere you want to be able to change the field.
