Right-click the SUM(Sales) in the Rows shelf, select Discrete and drag the pill to the left of the Category. This will cause Tableau to sort the table by the first field which is now our percent difference.
Build your stacked bar chart in Tableau. Create a combined field using the dimensions you want to sort by. Drag the combined field to the detail and sort by the measure. Finally, drag the dimension that you are sorting by to the detail. Now you have a stacked bar that is sorted by two dimensions.
Only 'calculated groups' can be used in a calculation — groups created with the 'ad-hoc' method of selecting members in the view and then clicking the group button cannot be used in calculated fields. Sets, on the other hand, can be used in calculations by using a bit of logic.
There are differences between the two that I will try to sum up. The most significant difference is that sets are dynamic while groups are not. When your data changes the set will update with it while this is not an option with groups. Sets offer greater flexibility as you can link them to a condition.

Sorting multi-dimension tables in Tableau can be a tricky business. You can set a dimension to sort descending based on the sum of sales, but it will then sort that dimension as a whole. So, if you were to sort Sub Region as follows: It will sum up sales for each sub-region as a whole, then sort descending.
Nested sort is a feature in Tableau first introduced in 2018.2 that allows you to sort a measure within a measure or sort the categories within each pane. For example, if you want to sort Subcategory Sales within each Category in ascending order.
