Open the PDF that you want to password protect, then click "File" in the taskbar at the top of the screen. Select "Export" from the dropdown menu. At the bottom of the pop-up window, check the box next to "Encrypt." Enter a password, then re-enter it where indicated to verify, then hit save.

You can make simple changes to a pdf file using the free built-in Preview App that comes free with OS X. If you double-click on any pdf file in OS X it will open in an application called Preview. Preview has a hidden Annotations Toolbar' that will allow you to edit the pdf file.
Choose Password Security setting in the drop down box. Password Security Settings dialog box will pop up. Check Restrict editing and printing of the document box. Enter a password you would like to use to protect the file, and select permissions for Printing and Changes, and click OK.
In Preview, open the PDF. From the toolbar, click Sidebar to open the sidebar drawer. You will see thumbnails of each page in the PDF. Click and drag the thumbnail of the page you would like to move to its new location. (Hold down the Command key to select multiple pages.)
Move pages in a PDF: Choose View > Thumbnails or View > Contact Sheet, then drag the pages to their new location.
Tip: To rearrange more than one page, press the Command key as you click the page thumbnails you want to rearrange, then release the Command key. Control-click one of the selected page thumbnails, then choose Cut. Control-click the page thumbnail you want the content to follow, then choose Paste.
